Monday's Munching Moments

I have to start off first with a bit of a Mummy Brag. Miss Sunshine is very excited and for good reason. She was one of the winners in a writing competition at school. So she a the very small handful of other winners (through both the primary and the secondary school) get to spend two hours with a local children's author. They've had their first hour and will do the second sometime soon. Whoever thought a little piece of homework could bring such wonderful rewards!

Onto the real reason for this post though. Food! Namely, this week's menu plan.

Monday: Pork with apple & celery, potatoes, vegies
Tuesday: Singapore Noodles
Wednesday: Pork meatloaf, potatoes, vegies
Thursday: Chicken & Rice Noodle Stir Fry
Friday: Homemade Pizza: potato, onion & garlic; pineapple, bacon, mushroom
Saturday: Nachos
Sunday: Soup & toast

Actually...Monday's & Tuesday's meals got swapped with some others from last week....so we'll do the chicken wings & beef casserole from last week then. Oh well, that's the beauty of a menu plan. You can swap meals around if you need to and you still have all the things you need in order to make it.

Congratulations to Miss Sunshine--what a wonderful honor! I know you must be so proud.

Your Friday pizza looks very interesting. I've never heard of potato on a pizza. Is it mashed? fried? raw? do tell!

I brush the base with olive oil and sprinkle finely chopped onion & garlic. Then we do a layer of peeled, thinly sliced raw potato (about 3 spuds usually). I have a slicer thing to make the job easy and consistent. Then you top with mozzarella sprinkle lightly with a bit of salt and voila ~ potato pizza. It's the kids' favourite.

Wow, that potato pizza recipe sounds great! I'm going to give it a try. I'll let you know if I can get my boys to give it a try!

If they like potatoes they should like it. I've finally come to the realisation that pizza with a maximum of three things (besides the cheese) on them are the best. Forget the 'supreme' all the toppings at once kind...we like simple.
