Quick Quiche

My mother has used this recipe for many years. I got it from her...and lost it...found it again. I've repeated that cycle many times, but the recipe is finally in my little red folder never to be lost again! It's simple, foolproof and you can put into it anything you like, and have around. You've just got to love those kinds of recipes don't you! It makes for a great healthy and frugal meal. You can serve it with salad and jacket potatoes, or wedges and vegetables depending on the weather! You could also have it cold and would do great in lunch boxes if you had any left.

Quick Quiche

1 1/2 cups milk
1/2 cup self raising flour
3 eggs
1 cup cheese, grated
whatever else you like:
ham or bacon, mushrooms, onion, corn, tomatoes etc

  1. Preheat oven to 200C/400F.
  2. Beat eggs and milk together. Mix in flour and cheese.
  3. Place 'filling' ingredients into a well greased pie or quiche dish and pour the egg & flour mixture over gently.
  4. Bake for about 45 minutes, until it is set in the middle.
My personal favourite quiche is spring onion, bacon & cheese.

Tracy, I have an awesome sweet version of this "impossible pie" - so named for the way it appears to form a pastry even though you haven't made one. I'll hunt it down. It's soooo good.

I made the quiche last night Tracy, It was soooo simple and delicous,I put ham,tomato, zucchini, onion, and mushrooms in it, I will certainly be adding this recipe to my menu list.

We have it in our lunchboxes today with a salad for lunch as well.

We always have way too many eggs at the end of the week. I think perhaps I will try this for lunch at the weeks end.
