More of the Summer Menu Plan

Thought I'd pop in very quickly to post this week's menu plan. We've been enjoying all the delights of warm summer days with Dh on holidays, so days pass quickly before I realise I've not posted in a few!

Monday: Pasta Bolognaise
Tuesday: BBQ lamb chops, cubed potatoes, salad
Wednesday: Pasta & chicken salad
Thursday: Cold deli meats, salads
Friday: Chicken & rice noodle stir fry
Saturday: fish & chips
Sunday: Hamburgers

On Wednesday night we'll be enjoying a dessert night to celebrate the birthday of a friend's son. I think this year I'll make 'Southern Ambrosia'. It's the perfect summer dessert and I love that apart from the cream, everything else is in the pantry. My children were dubious about the addition of mini marshmallows to a fruit salad....but they've decided it is definitely worth the oddity!

Oh my goodness me! Meat, meat and yet more meat. You certainly do your bit towards the annihilation of the animal population don't you?
Have you thought of including more vegetarian meals? All Gods Creatures etc....
No doubt you think "who cares, slaughter another beast for our enjoyment".

Happy New Year, Tracy! Sorry to have been out of touch for so long--my cold lasted forever, and Christmas seemed to last even longer.

Mini-marshmallows in fruit salad are a big hit with those of us in my family who actually enjoy ambrosia-style fruit salad (that would be me and Jack). I like the way they get all melty.

So, is the above anonymous comment a joke from a friend, or a trolling vegan come to save the world from us carnivores? Just wondering ...

I hope you're feeling a LOT better Frances.

I suspect the latter might be true ~ all my friends eat meat. Unfortunately this person doesn't realise the limited cooking capabilities of camping, the fact that we eat small quantities of meat between us, or that we normally include vegetarian meals amongst our carnivorous tendencies. Everyone's entitled to their opinion I guess.
